Keto Peanut Soup
Peanut Soup is probably the most iconic Chinese New Year dessert. It has always been a crowd-favourite, and now -ketogenic. Simply add sugar substitute Swerve for a sweeter taste, and xanthan gum to give it a lusciously thick and smooth texture. One bowl won’t be enough!
Ingredients
- 100g SK Peanut Butter
- 70g cream
- 200ml water
- ¼ tsp salt
- 2 tbsp swerve
- ¼ tsp xanthan gum
- Garnish, chopped peanuts
Instructions
- Put all ingredients into a small saucepan and stir on low heat until ingredients are well incorporated
- It's ready to serve once the peanut soup is thickened and smooth
- Garnish with some chopped peanuts and serve warm
Tip!
You can use any nut butter to replace peanut butter for an equally delicious dessert soup
